Ingredients

Dry Ingredients
  • 1 cup all-purpose flour Whole wheat flour can be used for a healthier option.
  • 2 tablespoons brown sugar Adds sweetness and a rich, caramel flavor.
  • 1 tablespoon baking powder Ensures that the pancakes rise and remain fluffy.
  • 1/2 teaspoon baking soda Helps the pancakes puff up during cooking.
  • 1/4 teaspoon salt Balances out the sweetness.
Wet Ingredients
  • 1 ripe banana ripe banana The star ingredient; makes the pancakes moist and flavorful.
  • 1 cup milk Dairy or non-dairy alternatives can be used.
  • 1 large egg Acts as a binder for the ingredients.
  • 1 tablespoon melted butter Adds richness; can be replaced with oil for dairy-free options.

Method

Preparation
  1. In a large mixing bowl, combine the flour, brown sugar, baking powder, baking soda, and salt. Whisk them together until well blended.
  2. In a separate bowl, mash the ripe banana using a fork until smooth.
  3. Add the milk, egg, and melted butter to the mashed banana. Stir until just combined.
  4. Pour the wet ingredients into the dry mixture. Gently fold the ingredients together until just mixed; some flour lumps are okay.
Cooking
  1. Heat a non-stick skillet or griddle over medium heat and grease lightly with butter or oil.
  2. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
  3. Check for doneness by cutting one in half; it should be fluffy with no wet batter.
Serving
  1. Stack the pancakes on a plate and serve warm with maple syrup, fresh banana slices, or your favorite toppings.
