- Sprinkle 1 tablespoon of gelatin powder over 1/2 cup of cold water in a bowl. Let it sit for 5 minutes to bloom.
- In a saucepan, warm 1 cup of plain water over medium heat (not boiling). Once heated, remove from heat.
- Add the bloomed gelatin to the warm water. Stir until completely dissolved with a smooth texture.
- Add in 1 tablespoon of freshly squeezed lemon juice and 1-2 tablespoons of honey or your preferred sweetener. Mix thoroughly until well combined.
- Pour the mixture into a glass, cover, and refrigerate for about 30 minutes or until it sets slightly.
- Enjoy the drink slightly chilled. Optionally, add chia seeds for extra fiber.
- Garnish with fresh mint leaves if desired.
