Preparation
  1. Sprinkle 1 tablespoon of gelatin powder over 1/2 cup of cold water in a bowl. Let it sit for 5 minutes to bloom.
  2. In a saucepan, warm 1 cup of plain water over medium heat (not boiling). Once heated, remove from heat.
  3. Add the bloomed gelatin to the warm water. Stir until completely dissolved with a smooth texture.
  4. Add in 1 tablespoon of freshly squeezed lemon juice and 1-2 tablespoons of honey or your preferred sweetener. Mix thoroughly until well combined.
  5. Pour the mixture into a glass, cover, and refrigerate for about 30 minutes or until it sets slightly.
  6. Enjoy the drink slightly chilled. Optionally, add chia seeds for extra fiber.
  7. Garnish with fresh mint leaves if desired.
