Preparation
  1. In a small bowl, dissolve about 2 tablespoons of gelatin powder in 1/2 cup of cold water. Let it sit for about 5 minutes to bloom.
  2. In a saucepan, bring 2 cups of water (or fruit juice) to a gentle boil over medium heat.
  3. Stir the bloomed gelatin mixture into the hot liquid until fully dissolved, about 2-3 minutes.
  4. Add your desired sweetener and mix until dissolved; taste and adjust the sweetness.
  5. If using, add fruit pieces or puree for additional flavor. Remove the pan from heat.
  6. Carefully pour the mixture into small cups or molds and allow them to cool at room temperature for 15 minutes.
  7. Transfer cups to the refrigerator and chill for at least 2-4 hours until fully set.
