  1. In a small bowl, mix 2 tablespoons of unflavored gelatin powder with 1/4 cup of cold water. Let it sit for about 5 minutes until it blooms and thickens.
  2. In a saucepan, pour 1 cup of your chosen fruit juice. Heat gently over medium heat until it’s warm but not boiling—about 5 minutes.
  3. Remove the saucepan from the heat. Add the bloomed gelatin to the warm juice. Whisk thoroughly until the gelatin is completely dissolved and the mixture is smooth.
  4. Add in 2 tablespoons of honey or maple syrup. Stir well to combine and enhance the flavor.
  5. Pour the mixture into molds or a shallow dish. Cool to room temperature, then refrigerate for at least 4 hours until fully set.
  6. Once set, gently remove from molds. Serve it with fresh fruits or as part of a healthy snack.
