Ingredients

Main ingredients
  • 1-2 teaspoons unflavored gelatin, to provide the structure and protein Use 1 teaspoon for a softer set, 2 teaspoons for a firmer texture.
  • 3/4 cup warm water, warmed to dissolve the gelatin Water temperature helps the gelatin dissolve cleanly.
  • 1/4 cup cold water You can substitute brewed iced herbal tea for extra flavor.
  • 1 teaspoon low-calorie sweetener or honey (optional) Use a low-calorie sweetener for minimal calories, or honey for natural sweetness.
  • Fresh to taste lemon or lime juice (optional) A squeeze brightens the flavor and adds pleasant acidity.
  • Ice cubes (optional) For a smoothie-like, frosty texture.

Method

Preparation and Blooming
  1. Sprinkle the gelatin over the cold water and let it bloom for 1 to 2 minutes.
  2. Tip: Use a shallow dish so the gelatin blooms evenly.
Dissolving Gelatin

  2. Tip: Do not boil; high heat can reduce gelatin clarity.

  2. Start with a squeeze of citrus and a little sweetener, then taste and tweak.
Combining Ingredients
  1. Combine the mixture with the remaining cold water or brewed iced herbal tea.
  2. Stir to combine and distribute flavors evenly.
Chilling and Serving
  1. Refrigerate for 20 to 40 minutes until slightly gelled.
  2. For a smoothie texture, blend the slightly gelled mixture with ice.
  3. Serve chilled, garnished with a twist of citrus or a sprig of mint if desired.

Notes

Measure gelatin accurately and allow it to bloom fully for a smooth result. Store prepared mixture in an airtight container in the refrigerator for up to 48 hours. Freezing is not ideal for texture, but you can freeze portions in an ice cube tray for blended drinks.
