Preparation
- Preheat your oven to 350°F (177°C) and prepare baking sheets with parchment paper.
- In a large bowl, whisk together the flour, baking soda, spices (ginger, cinnamon, cloves, nutmeg), and salt.
- In another mixing bowl, cream the softened butter and brown sugar together until light and fluffy (about 3-4 minutes).
- Add the molasses and egg to the butter mixture, mixing until fully combined.
- Gradually add the dry mixture to the wet ingredients, stirring until a dough forms.
- Divide the dough in half, wrap each portion in plastic wrap, and refrigerate for at least 1 hour or overnight.
- Roll out the chilled dough on a floured surface to about ¼ inch thick and cut into desired shapes using cookie cutters.
- Place each cookie onto the prepared baking sheets and bake for 10-12 minutes, until the edges are light brown and the centers are set.
