Method
 

Preparation
  1. Preheat your oven to 350°F (177°C) and prepare baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, spices (ginger, cinnamon, cloves, nutmeg), and salt.
  3. In another mixing bowl, cream the softened butter and brown sugar together until light and fluffy (about 3-4 minutes).
  4. Add the molasses and egg to the butter mixture, mixing until fully combined.
  5. Gradually add the dry mixture to the wet ingredients, stirring until a dough forms.
  6. Divide the dough in half, wrap each portion in plastic wrap, and refrigerate for at least 1 hour or overnight.
  7. Roll out the chilled dough on a floured surface to about ¼ inch thick and cut into desired shapes using cookie cutters.
  8. Place each cookie onto the prepared baking sheets and bake for 10-12 minutes, until the edges are light brown and the centers are set.
