Preparation
- Peel the fresh ginger using a spoon or peeler and slice it thinly.
- In a small saucepan, bring 2 cups of water to a gentle boil over medium heat.
- Once the water is boiling, add the sliced ginger and let it simmer for 10-15 minutes.
- Remove from heat and stir in honey and/or lemon juice if desired.
- Strain the ginger pieces and pour the drink into a mug.
- Optionally, let it cool slightly, pour over ice, and garnish with lemon or mint.
