  • 3 cups all-purpose flour or gluten-free blend
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter softened
  • cups granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon lemon zest optional
  • ¼ cup sugar for rolling
  • 1 tablespoon Irish whiskey optional

Method
 

  1. Whisk together flour, baking powder, and salt.
  2. Cream butter and sugar until light and fluffy, about 3-4 minutes.
  3. Beat in eggs one at a time. Add vanilla, lemon zest, and whiskey if using.
  4. Gradually mix in dry ingredients just until combined. Do not overmix.
  5. Form dough into a disc, wrap, and refrigerate for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Roll dough into 1-inch balls, coat in sugar, and place 2 inches apart on sheet.
  8. Bake for 10-12 minutes until edges are set. Cool on sheet 5 minutes before transferring to rack.
