Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and optional nutmeg or lemon zest.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  6. Drop rounded mounds of dough onto a prepared baking sheet lined with parchment paper, spacing them a couple of inches apart.
Baking
  1. Bake in the preheated oven for 12-15 minutes until the edges are light golden brown.
  2. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
