Preparation
  1. In a large skillet over medium heat, add the olive oil. Once shimmering, it's ready for cooking.
  2. Add the minced garlic and ginger, stirring for about a minute until fragrant and golden.
  3. Add the ground turkey, breaking it up with a spatula, and cook for about 5-7 minutes until browned.
  4. Stir in the diced red bell pepper and grated carrot, cooking for an additional 3-4 minutes.
  5. Pour in the soy sauce and rice vinegar, mixing well, and let simmer for 2 minutes.
  6. While cooling slightly, separate the lettuce leaves and arrange them on a platter.
  7. Spoon the turkey mixture into each lettuce cup and garnish with fresh herbs and peanuts if desired.
