- Add the ground turkey, breaking it up with a spatula, and cook for about 5-7 minutes until browned.
- Stir in the diced red bell pepper and grated carrot, cooking for an additional 3-4 minutes.
- Pour in the soy sauce and rice vinegar, mixing well, and let simmer for 2 minutes.
- While cooling slightly, separate the lettuce leaves and arrange them on a platter.
- Spoon the turkey mixture into each lettuce cup and garnish with fresh herbs and peanuts if desired.
