  • 1/4 cup coconut oil or unsalted butter For a rich texture and flavor; coconut oil gives a subtle sweetness.
  • 1/2 cup honey or maple syrup Sweeteners that add moisture without refined sugar.
  • 1 large egg Binds the ingredients and adds richness.
Cinnamon Sugar Topping
  • 1/4 cup sugar or coconut sugar For rolling the churro bites.
  • 2 tsp ground cinnamon Enhances the sweetness and adds that classic churro flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to preheat while you prepare the dough.
  2. In a mixing bowl, whisk together the flour, baking powder, salt, and 1 teaspoon of cinnamon until fully combined and there are no lumps.
  3. In another bowl, melt the coconut oil (or butter), then stir in the honey (or maple syrup) and the egg until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. The dough should be thick yet pliable.
  5. Using your hands, roll the dough into small balls about the size of a marble and place them on a parchment-lined baking sheet.
  6. Bake in the preheated oven for about 10–12 minutes, or until they start to turn golden brown and are firm to the touch.
Coating
  1. In a small bowl, combine the sugar and remaining cinnamon.
  2. Once churro bites are out of the oven, let them cool for a few minutes before rolling them in the cinnamon sugar mixture while still warm.

Notes
