Preparation
- Preheat your oven to 350°F (175°C) to preheat while you prepare the dough.
- In a mixing bowl, whisk together the flour, baking powder, salt, and 1 teaspoon of cinnamon until fully combined and there are no lumps.
- In another bowl, melt the coconut oil (or butter), then stir in the honey (or maple syrup) and the egg until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. The dough should be thick yet pliable.
- Using your hands, roll the dough into small balls about the size of a marble and place them on a parchment-lined baking sheet.
- Bake in the preheated oven for about 10–12 minutes, or until they start to turn golden brown and are firm to the touch.
Coating
- In a small bowl, combine the sugar and remaining cinnamon.
- Once churro bites are out of the oven, let them cool for a few minutes before rolling them in the cinnamon sugar mixture while still warm.

Notes
These churro bites can be customized with different fillings such as chocolate or flavored with pumpkin spice. Store leftovers in an airtight container for 2-3 days at room temperature or for a week in the fridge.
