  • 1 pound ground beef
  • 8 ounces pasta (your choice, like penne or rotini)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or coconut cream) Healthier substitute
  • 1 cup beef broth
  • 1 cup grated Parmesan cheese Plus extra for serving

Method
 

Preparation
  1. In a large pot, bring salted water to a boil. Add your chosen pasta and cook according to package instructions until al dente. Once done, drain and set aside, reserving a little pasta water for later.
  2. In a large skillet over medium heat, add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes, and drain excess fat.
  3. Add the chopped onion to the skillet with the beef. Cook for 3-4 minutes or until translucent, then stir in the minced garlic.
  4. Pour in the beef broth and bring to a simmer. Let it reduce for about 2-3 minutes. Lower the heat, then gradually stir in the heavy cream and Parmesan cheese.
  5. Gently fold in the cooked pasta, ensuring that every piece is coated in that luxurious sauce. Let it sit on low heat for another 2-3 minutes.
  6. Taste and adjust the seasoning with salt and black pepper. Serve hot, garnished with freshly chopped parsley and an extra sprinkle of Parmesan on top.
