- Season the beef cubes with Jamaican curry powder, salt, and pepper. Toss in a bowl to coat evenly.
- Heat the vegetable oil in a large pot over medium-high heat.
- Add the seasoned beef and brown on all sides, working in batches if necessary.
- Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent, about 3 to 5 minutes.
- Add the cubed potatoes, beef broth, and soy sauce. Stir and scrape up any browned bits from the pot.
- Bring to a boil, then reduce heat and simmer covered until the beef is tender and the potatoes are cooked through, about 1 to 1.5 hours.
- Garnish with chopped green onions and serve hot, optionally over rice or with crusty bread.
