Preparation
- Peel a 2-inch piece of fresh ginger and slice it thinly.
- In a kettle or saucepan, bring 2 cups of water to a rolling boil.
- Once the water is boiling, add the sliced ginger and simmer for 10 minutes.
- Carefully strain the ginger slices from the water into a cup or teapot.
- Add the juice of half a lemon and a teaspoon of honey, if desired. Stir well.
- Serve hot or chill in the fridge before drinking.
Storage
- Store any leftovers in the fridge for up to 3 days and reheat before drinking.
