Ingredients

Main Ingredients
  • 1 cup unsalted butter, softened Provides the rich, creamy base for the cookies.
  • 3/4 cup granulated sugar Adds sweetness and helps create that desirable crumbly texture.
  • 2 cups all-purpose flour Gives the cookies structure and stability.
  • 1/4 teaspoon salt Balances the sweetness and enhances overall flavor.
  • 1 teaspoon vanilla extract Adds a warm, comforting aroma.
  • 3/4 cup jelly or jam of your choice For that luscious filling. Raspberry and apricot are classic choices!

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened butter with the granulated sugar until light and fluffy, about 2-3 minutes.
  3. Gradually mix in the flour and salt until there are no flour pockets visible and the dough comes together.
  4. Scoop about a tablespoon of dough and roll it into a ball. Place them on a lined baking sheet, about 2 inches apart.
  5. Create a small indentation in the center of each ball using your thumb or the back of a teaspoon.
  6. Spoon a small amount of jelly into each indentation, about a half teaspoon is enough.
Baking
  1. Bake for 12-15 minutes until cookies are lightly golden around the edges but soft in the center.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Serving
  1. Enjoy the cookies warm or store them for later.
