Preparation
- Chill your serving dish by placing a small bowl or ramekin in the fridge for 5 to 10 minutes.
- Pour 1 cup of hot water into a small saucepan and sprinkle the gelatin evenly over the surface. Let it sit and bloom for 1 to 2 minutes.
- Stir the mixture over low heat until the gelatin is fully dissolved, then remove it from the heat.
- Add 1 teaspoon of fresh lemon or lime juice and sweetener or honey if using. Allow the mixture to cool for 3 to 5 minutes.
- Pour the mixture into the chilled ramekin and refrigerate for 30 to 60 minutes or until completely set.
- Spoon a small portion, about 4 to 8 ounces, before your meal. Serve chilled.

Notes
For a smooth finish, avoid boiling the gelatin. Keep any extra gelatin covered in the refrigerator and consume within 2 to 3 days for best texture. Freezing is not recommended as it may affect the texture.
