  • to taste Low-calorie sweetener or honey (optional) Sweetens the gelatin as needed; use a small amount so the texture stays clean.
  • 1 tablespoon optional fruit puree or small fruit pieces Provides natural flavor and a bit of texture; berries or citrus purees work well.

Method
 

Preparation
  1. Chill your serving dish by placing a small bowl or ramekin in the fridge for 5 to 10 minutes.
  2. Pour 1 cup of hot water into a small saucepan and sprinkle the gelatin evenly over the surface. Let it sit and bloom for 1 to 2 minutes.
  3. Stir the mixture over low heat until the gelatin is fully dissolved, then remove it from the heat.
  4. Add 1 teaspoon of fresh lemon or lime juice and sweetener or honey if using. Allow the mixture to cool for 3 to 5 minutes.
  5. Pour the mixture into the chilled ramekin and refrigerate for 30 to 60 minutes or until completely set.
  6. Spoon a small portion, about 4 to 8 ounces, before your meal. Serve chilled.
