Ingredients
  

Gelatin base ingredients
  • 2 tablespoons unflavored gelatin powder Helpful for setting the jello into a firm, wobbly texture.
  • 1/2 cup cold water Used to bloom the gelatin so it dissolves smoothly.
  • 1 cup hot water or juice Hot liquid dissolves the gelatin; use juice for added flavor.
  • 1/2 cup fruit juice or sugar-free drink mix Adds sweetness and character; choose a complementary flavor.
  • Optional: collagen powder Stir in with the dissolved gelatin if you want extra protein.
  • Optional: fresh fruit pieces Small berries or chopped fruit work best. Layer them in the molds before pouring.
  • to taste Sweetener (e.g., honey, stevia, or syrup) Adjust depending on how sweet your juice or drink mix already is.

Method
 

Blooming the Gelatin
  1. Sprinkle the 2 tablespoons of unflavored gelatin powder over 1/2 cup cold water in a small bowl. Let it sit for 3 to 5 minutes until it absorbs the water and becomes spongy.
Heating the Liquid
  1. Warm 1 cup hot water or hot juice to a gentle simmer on the stove or in a microwave-safe cup. Do not boil.
Dissolving the Gelatin
  1. Pour the hot liquid over the bloomed gelatin and stir continuously until the gelatin is fully dissolved and the mixture looks clear.
Adding Flavor
  1. Stir in 1/2 cup fruit juice or sugar-free drink mix and add sweetener to taste. If using optional collagen powder, whisk it in now until smooth.
Preparing the Molds
  1. If using fresh fruit pieces, place them in the bottom of bowls or molds now so the gelatin will set around them.
Combining and Cooling
  1. Pour the gelatin mixture slowly over the fruit in the molds or into serving bowls and let it sit at room temperature until it is warm but not hot.
Refrigerating to Set
  1. Cover the molds or bowls and refrigerate for at least 2 hours, or until fully set.
Serving
  1. Spoon the jello into bowls or invert molds onto plates to unmold. A thin knife around the edges can help release the jelly from its mold.

Notes
