These Keto Scotch Eggs wrap tender hard-boiled eggs in seasoned sausage and almond flour for a crispy, protein-packed low-carb snack or meal. Perfect for brunch, meal prep, or a quick grab-and-go treat!

Ingredients
  

  • 6 large eggs, hard-boiled
  • 1 lb ground sausage (Italian or breakfast style)
  • 0.5 cup almond flour
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp paprika (smoked or sweet)
  • to taste salt and pepper
  • as needed olive oil spray

  • Air fryer or oven To cook Scotch eggs
  • Cooking spray To prevent sticking

Method
 

  1. Start by hard boiling the eggs. Place them in a pot, cover with water, bring to a boil, then simmer for 9-12 minutes. Transfer to an ice bath to cool.
  2. In a bowl, mix ground sausage, almond flour, garlic powder, onion powder, paprika, salt, and pepper until well combined.
  3. Peel the eggs. Flatten a portion of sausage in your hand and wrap around each egg until fully enclosed.
  4. Preheat air fryer to 300°F or oven to 400°F. Lightly grease air fryer basket or baking tray with olive oil spray.
  5. Cook:
    • Air Fryer: 15–18 minutes until sausage is browned and cooked through.
    • Oven: 20–25 minutes until golden and fully cooked.
  6. Let the eggs rest for a few minutes before slicing. This helps the juices settle and improves presentation.
  7. Slice in half and enjoy with mustard or dipping sauce of your choice.
