Lasagna Roll-Ups are a delightful twist on traditional lasagna, featuring tender pasta sheets rolled around a creamy filling, topped with marinara sauce and melted mozzarella.

Ingredients
  

For the Roll-Ups
  • 9 pieces Lasagna noodles Look for no-boil noodles for an even quicker option.
  • 15 ounces Ricotta cheese Can be substituted with cottage cheese for a lighter option.
  • 2 cups Spinach Fresh or frozen; can be omitted for picky eaters.
  • 2 cups Marinara sauce Opt for homemade or store-bought.
  • 2 cups Mozzarella cheese Consider a mix of mozzarella and parmesan for added depth.
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 tablespoon Basil Optional, for flavor enhancement.

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.
  2. In a mixing bowl, combine ricotta cheese, spinach, half of the mozzarella, salt, pepper, and any additional herbs you'd like (basil works wonderfully). Mix until well incorporated.
  3. In a saucepan, heat the marinara sauce over medium heat until warmed through. You could add garlic and onions for additional flavor.
Assemble and Bake
  1. Take a noodle, spread about 2-3 tablespoons of the ricotta mixture along its length, then roll it up tightly. Place each roll seam-side down in a greased baking dish.
  2. Pour the warm marinara sauce over the assembled roll-ups, covering them generously. Sprinkle the remaining mozzarella cheese and parmesan on top.
  3. Preheat your oven to 375°F (190°C). Bake the roll-ups for about 30–35 minutes or until the cheese is bubbly and slightly golden.
  4. Let the roll-ups cool for about 5 minutes before serving.

Notes
