Preparation
- Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.
- In a mixing bowl, combine ricotta cheese, spinach, half of the mozzarella, salt, pepper, and any additional herbs you'd like (basil works wonderfully). Mix until well incorporated.
- In a saucepan, heat the marinara sauce over medium heat until warmed through. You could add garlic and onions for additional flavor.
Assemble and Bake
- Take a noodle, spread about 2-3 tablespoons of the ricotta mixture along its length, then roll it up tightly. Place each roll seam-side down in a greased baking dish.
- Pour the warm marinara sauce over the assembled roll-ups, covering them generously. Sprinkle the remaining mozzarella cheese and parmesan on top.
- Preheat your oven to 375°F (190°C). Bake the roll-ups for about 30–35 minutes or until the cheese is bubbly and slightly golden.
- Let the roll-ups cool for about 5 minutes before serving.
