Preparation
- Preheat your oven to 350°F (175°C).
- Grease two 9-inch round cake pans and line the bottoms with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt until combined. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 3–4 minutes.
- Add eggs one at a time, mixing well after each addition. Then, mix in the lemon zest and fresh lemon juice.
- Gradually sift the flour mixture into the wet ingredients, alternating with the milk, starting and ending with the flour. Mix until just combined.
Baking
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the cakes cool in the pans for 10 minutes before transferring to a cooling rack.
