Ingredients

Dry Ingredients
  • 2 cups all-purpose flour The backbone of our cake, providing structure and tenderness.
  • 1.5 cups granulated sugar For sweetness and a hint of caramelization.
  • 1 tablespoon baking powder Helps the cake rise beautifully.
  • 0.5 teaspoon salt Balances and enhances flavors.
Wet Ingredients
  • 0.5 cups unsalted butter, softened Adds rich flavor and moistness.
  • 1 cup buttermilk Ensures a tender crumb and tangy flavor.
  • 3 large eggs Provides structure and moisture.
  • 2 tablespoons lemon zest Infuses bright citrus notes.
  • 0.25 cups fresh lemon juice Adds tartness and depth of flavor.

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans, lining the bottoms with parchment paper for easy release.
  2. In a large mixing bowl, combine the softened butter and granulated sugar. Beat them together with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Add eggs one at a time, mixing well after each addition until the mixture is creamy and homogeneous.
  4. Pour in the buttermilk, lemon zest, and lemon juice, and gently mix until well combined.
  5. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add this dry mix to the wet ingredients, stirring just until no dry streaks remain.
Baking
  1. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Once baked, cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Serving
  1. Drizzle with your favorite lemon glaze or dust with powdered sugar before serving.
