Preparation
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper and set them aside.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy (about 3-4 minutes).
- Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Using a tablespoon, scoop out dough and place them 2 inches apart on the prepared sheets.

- Bake for 8-10 minutes or until the edges start to turn light golden brown.
