- Slice eggplants into ½-inch rounds. Sprinkle with salt and let sit in a colander for 30 minutes to draw out moisture.
- Rinse and pat dry with a clean towel to remove excess salt and water.
- Toss slices with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Place slices in a single layer in your air fryer basket (work in batches if needed).
- Air fry at 400°F (200°C) for 12–15 minutes, flipping halfway, until crispy and golden.
- Garnish with parsley and serve hot.
