Ingredients
  

  • 2 medium eggplants, sliced into ½-inch rounds
  • 2 tbsp olive oil or spray
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • to taste salt and pepper
  • as needed fresh parsley (for garnish)

Method
 

  1. Slice eggplants into ½-inch rounds. Sprinkle with salt and let sit in a colander for 30 minutes to draw out moisture.
  2. Rinse and pat dry with a clean towel to remove excess salt and water.
  3. Toss slices with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  4. Place slices in a single layer in your air fryer basket (work in batches if needed).
  5. Air fry at 400°F (200°C) for 12–15 minutes, flipping halfway, until crispy and golden.
  6. Garnish with parsley and serve hot.

Notes
