Ingredients

  • 2 medium zucchinis, sliced into fry shapes
  • 0.5 cup almond flour or whole wheat breadcrumbs
  • 0.25 cup grated Parmesan cheese (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp paprika
  • salt and pepper to taste
  • cooking spray (olive oil or non-stick)

Equipment

  • air fryer
  • mixing bowl
  • tongs
  • cutting board
  • paper towels

Method

  1. Wash and slice the zucchinis into fry-shaped strips. Pat dry with a paper towel to remove moisture.
  2. In a bowl, combine almond flour or breadcrumbs, Parmesan cheese (optional), garlic powder, onion powder, paprika, salt, and pepper.
  3. Dip zucchini fries into the coating mixture, pressing gently to help it stick. Lightly mist with cooking spray if needed.
  4. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  5. Place fries in a single layer in the air fryer basket. Cook for 10–12 minutes, flipping halfway for even crispiness.
  6. If needed, air fry an additional 2–3 minutes to increase crunchiness.
  7. Remove fries, let cool slightly, and serve with your favorite dip.

Notes

To make them extra crispy, use panko or lightly mist the coating with oil. For added kick, mix in cayenne or chili flakes. These fries pair well with marinara, ranch, or Greek yogurt dip. Store leftovers up to 2 days and reheat in the air fryer for crunch.
