Meatloaf Base
  • 1 pound ground beef Can substitute with turkey or chicken.
  • 1 cup breadcrumbs Panko will give extra crunch.
  • 1 large egg Essential for binding the meatloaf.
  • Salt and pepper to taste For seasoning.
Mac and Cheese
  • 2 cups elbow macaroni Feel free to use gluten-free or whole wheat pasta.
  • 2 cups shredded cheddar cheese Try other cheeses like mozzarella or Gouda for variation.
  • 1 cup milk Use plant-based milk for a dairy-free option.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, salt, and pepper. Mix well to create a meatloaf base.
  3. Cook elbow macaroni according to package instructions until al dente. Drain and return to the pot.
  4. Stir in 1.5 cups of shredded cheddar cheese and milk into the cooked macaroni.
Assembly
  1. In a greased 9×13-inch baking dish, spread half of the macaroni mixture evenly.
  2. Layer the seasoned meatloaf mixture over the top, then add the remaining macaroni mixture. Press down gently to create an even layer.
  3. Top with the remaining 0.5 cup of cheddar cheese.
Baking
  1. Slide the dish into the preheated oven and bake for about 30-35 minutes, until the cheese is bubbly and golden brown.
  2. Allow the casserole to cool for about 10 minutes before serving.
