Main Ingredients
  • 1 cup creamy peanut butter Base flavor; can substitute with almond or cashew butter.
  • 2/3 cup honey or maple syrup Natural sweetener; honey is stickier, maple has unique flavor.
  • 3 cups crispy rice cereal Adds crunch; can swap with another cereal for different textures.
  • 1 cup chocolate chips For melting and drizzling; use dark or milk chocolate.
  • 1/2 cup mini marshmallows Optional for chewiness; can skip if preferred.

Preparation
  1. In a medium saucepan over low heat, combine the peanut butter and honey until melted and well-combined, stirring continuously for 3-5 minutes.
  2. Remove from heat and quickly stir in the crispy rice cereal until well coated.
  3. Gently fold in mini marshmallows if using.
  4. Using a cookie scoop or your hands, drop spoonfuls onto a parchment-lined baking sheet.
  5. Melt the chocolate chips in the microwave in 30-second increments, stirring until smooth.
  6. Drizzle the melted chocolate over the cookies and place in the fridge for about 30 minutes to firm up.
  7. Once firm, serve and enjoy!
