- In a medium saucepan over low heat, combine the peanut butter and honey until melted and well-combined, stirring continuously for 3-5 minutes.
- Remove from heat and quickly stir in the crispy rice cereal until well coated.
- Gently fold in mini marshmallows if using.
- Using a cookie scoop or your hands, drop spoonfuls onto a parchment-lined baking sheet.
- Melt the chocolate chips in the microwave in 30-second increments, stirring until smooth.
- Drizzle the melted chocolate over the cookies and place in the fridge for about 30 minutes to firm up.
- Once firm, serve and enjoy!
