Preparation
  1. Begin by lining a baking sheet with parchment paper or wax paper, preparing it for the coconut balls.
  2. In a large mixing bowl, combine the crushed graham crackers and shredded coconut. Use a spatula to mix until there are no clumps.
  3. Add the softened cream cheese and sweetened condensed milk to the bowl, along with the vanilla extract if using. Mix thoroughly until a sticky dough forms.
  4. Cover the bowl with plastic wrap and refrigerate for 15-20 minutes to firm up the mixture.
  5. Remove the mixture from the fridge. Scoop portions and roll them into small balls.
  6. Roll each ball in the extra shredded coconut until evenly coated.
  7. Place the coated balls back on the lined baking sheet and chill for another 30 minutes to set.
