Ingredients
  

  • 3 cups quick-cooking oats or old-fashioned oats for chewier texture
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1 cup white chocolate chips
  • Optional: 1 tablespoon poppy seeds

Method
 

  1. Line two baking sheets with parchment paper or silicone mats.
  2. In a small bowl, mix lemon juice, zest, and vanilla extract.
  3. In a saucepan, combine butter, sugar, and milk. Bring to a boil and cook exactly 1 minute, stirring constantly.
  4. Remove from heat and stir in the lemon mixture, then oats and salt. Add white chocolate chips after 2–3 minutes if using.
  5. Drop spoonfuls onto prepared sheets. Flatten slightly and sprinkle poppy seeds if desired.
  6. Cool at room temperature 5 mins, then chill in fridge 30–45 mins or freeze 10–15 mins until set.
