Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, melt butter over medium heat. Add the sliced onions and a pinch of salt. Stir occasionally until they start to turn soft and caramelized, about 8-10 minutes.
- Spray your baking dish with cooking spray or grease it lightly with butter.
- Spread the sautéed onions evenly across the bottom of the baking dish. Nestle the chicken thighs on top of the onions.
- In a bowl, mix the onion soup mix, chicken broth, dried thyme, salt, and pepper. Whisk until well combined and pour over the chicken and onions.
- Cover the dish with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes.
- Let it rest for a few minutes before serving.
