Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook for about 15 minutes, stirring occasionally, until they turn soft and golden brown.
  3. While the onions are cooking, season your chicken with salt and pepper.
  4. In a large baking dish, place the sautéed onions in an even layer. Nestle the chicken on top, and sprinkle the onion soup mix evenly over it.
  5. Top the dish with the shredded cheese, covering the chicken entirely.
Cooking
  1. Cover the baking dish with aluminum foil and bake for about 40 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbling and golden, and the chicken is fully cooked.
