Ingredients

For the crust
  • 1 cup all-purpose flour Forms the base of the bars, providing structure and texture.
  • ½ cup unsalted butter, softened Adds richness and flavor to the crust.
  • ¼ cup brown sugar Sweetens the crust and adds a hint of caramel flavor.
  • ¼ teaspoon salt Enhances the overall flavors in the crust.
For the filling
  • 1 cup corn syrup The binding ingredient that creates the gooey filling.
  • ½ cup granulated sugar Sweetens the filling.
  • 3 large eggs Provides structure and helps the filling set.
  • 1 teaspoon vanilla extract Adds depth and warmth to the filling.
  • cups chopped pecans The star of the show—providing texture and crunch.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure your bars bake evenly.
  2. In a mixing bowl, combine the flour, softened butter, brown sugar, and salt. Mix until a crumbly dough forms, then press the mixture evenly into the bottom of a greased 9×9-inch baking pan. Bake for 10-12 minutes until lightly golden.
  3. While the crust is baking, whisk together the corn syrup, granulated sugar, eggs, vanilla extract, and chopped pecans in a separate bowl until well combined.
  4. Once the crust is done baking and has cooled slightly, pour the pecan mixture over the crust, spreading it evenly.
  5. Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and slightly jiggles in the center. Watch carefully to avoid over-baking.
  6. Remove the pan from the oven and allow the bars to cool in the pan for about 30 minutes. Then, transfer them to the refrigerator for at least 2 hours to set completely.
  7. Once chilled and firm, lift the bars out of the pan using the edges of the parchment paper, slice them into squares, and enjoy!

Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an indulgent treat. For added flavor, consider toasting the pecans before adding them to the filling.
