  • 4 slices bread (sourdough or whole grain) Choose a hearty bread for crunch.
  • 2 tablespoons pesto Use homemade or store-bought.
  • 4 ounces cheese (mozzarella and sharp cheddar blend) Creates a perfect melt.
  • 2 tablespoons butter For toasting the bread.
Optional Add-ins
  • 1 medium tomato, sliced For added freshness.
  • 1 cup fresh spinach To sneak in some greens.
  • 2 ounces grilled chicken For a heartier option.

Method
 

Preparation
  1. Gather your bread, pesto, cheese, and butter.
  2. Butter one side of each slice of bread.
Assembly
  1. On the unbuttered side of one slice, spread a thin layer of pesto.
  2. Add cheese on top along with any optional ingredients, then place the second slice of bread on top, buttered side up.
Cooking
  1. Preheat your skillet over medium heat.
  2. Carefully place your sandwich in the skillet.
  3. Grill for about 3-4 minutes on one side, until golden and crispy. Press down gently with a spatula.
  4. Repeat on the other side for another 3-4 minutes.
Serving
  1. Once both sides are golden and the cheese is melted, remove from heat.
  2. Allow to cool slightly, then slice in half and serve.
