  • 1 packet flavored pink gelatin mix Short, flavored packet that provides taste and color.
  • 2 tablespoons unflavored gelatin or collagen Adds body and sets the dessert. Collagen provides extra protein.
  • 1 cup hot water Needed to dissolve the unflavored gelatin.
  • 1/2 cup cold water or chilled brewed herbal tea Cools the mixture and can add subtle flavor.

Method
 

Preparation
  1. Heat 1 cup of water to near boiling, then pour it into a heatproof bowl. Sprinkle the unflavored gelatin over the hot water and stir until fully dissolved.
  2. In a separate cup, dissolve the flavored pink gelatin mix in 1/2 cup of hot water or combine the flavored packet directly with 1/2 cup of cold brewed fruit tea. Stir until the mixture is uniform and free of granules.
  3. Combine the dissolved unflavored gelatin mixture with the flavored mixture, stirring gently to blend completely.
  4. Taste and sweeten if desired using a sugar-free sweetener or a small amount of honey.
Setting
  1. Add cold water or ice cubes to cool the mixture to near room temperature.
  2. Pour the mixture into individual molds or a shallow pan.
  3. Refrigerate uncovered for 30 minutes, then cover and chill for an additional 1.5 to 2 hours until fully set.
Serving
  1. Serve chilled, garnished with fresh berries or a twist of citrus if desired.

Notes
