  • 1 cup hot water It should be near boiling but safe to handle.
  • 1 cup pink-flavored gelatin mix or unsweetened pink fruit juice (e.g., cranberry or diluted strawberry) Choose flavored mix for sweetness or unsweetened juice for a fruit-forward profile.
  • 1/2 to 1 cup cold sparkling water or chilled milk alternative Select sparkling water for a fizzy dessert or milk alternative for a creamier texture.
  • to taste sweetener (optional) Add if using unsweetened base or for added sweetness.
  • fresh berries or mint (optional) For garnish.

Method
 

Preparation
  1. Sprinkle 1 tablespoon of unflavored gelatin or collagen powder evenly over 1/4 cup cold water. Let it sit for 2 to 3 minutes to soften.
  2. Pour 1 cup of hot water over the bloomed gelatin and stir until completely dissolved, about 20 to 30 seconds.
  3. Stir in 1 cup of pink-flavored gelatin mix or unsweetened pink fruit juice. Taste and add sweetener if necessary. Stir until well combined.
Mixing
  1. Gently fold in 1/2 to 1 cup cold sparkling water or chilled milk alternative, being careful to preserve the bubbles if using sparkling water.
Chilling
  1. Pour the mixture into molds or cups and chill uncovered in the refrigerator for 2 to 4 hours until set.
  2. If you prefer a mousse, scoop the set gelatin into a blender with a little cold water and pulse until airy and smooth.
Serving
  1. Top with fresh berries or mint if desired. Serve cold for the most refreshing flavor.
