Preparation
- Sprinkle 1 tablespoon of unflavored gelatin or collagen powder evenly over 1/4 cup cold water. Let it sit for 2 to 3 minutes to soften.
- Pour 1 cup of hot water over the bloomed gelatin and stir until completely dissolved, about 20 to 30 seconds.
- Stir in 1 cup of pink-flavored gelatin mix or unsweetened pink fruit juice. Taste and add sweetener if necessary. Stir until well combined.
Mixing
- Gently fold in 1/2 to 1 cup cold sparkling water or chilled milk alternative, being careful to preserve the bubbles if using sparkling water.
Chilling
- Pour the mixture into molds or cups and chill uncovered in the refrigerator for 2 to 4 hours until set.
- If you prefer a mousse, scoop the set gelatin into a blender with a little cold water and pulse until airy and smooth.
Serving
- Top with fresh berries or mint if desired. Serve cold for the most refreshing flavor.
