Method
 

Preparation
  1. Preheat your oven to 200°C (about 400°F) and line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, combine the shredded mozzarella, Parmesan cheese, Italian seasoning, garlic powder, onion powder, and crushed red pepper flakes. Mix until evenly distributed.
  3. Spoon approximately 15 grams of the cheese mixture onto the prepared baking sheet, flattening each mound slightly and ensuring they are spaced at least 5 centimeters apart.
  4. Top each cheese disc with one or two mini pepperoni slices. Add optional toppings as desired, pressing lightly to adhere.
Baking
  1. Bake in the preheated oven for 8 to 10 minutes, observing closely to avoid over-browning. The cheese should be bubbling and the edges golden brown.
  2. Once done, remove the baking sheet and let the chips cool for 2 to 3 minutes to help them crisp up.
Serving
  1. Present the chips warm or at room temperature and serve alongside marinara sauce, garlic butter, ranch dressing, or spicy aioli for dipping.
