Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Unroll the refrigerated pie crusts and cut them to fit your ramekins or pie dish, leaving a bit of overhang.
  3. In a mixing bowl, combine the pizza sauce, assorted toppings, and shredded mozzarella cheese until well mixed.
  4. Place the crust in your ramekins, fill them generously with the filling, leaving space at the top for sealing.
  5. Drape the second pie crust over the filling, pinch and seal the edges, and brush with whisked egg.
Baking
  1. Place the filled pies onto a baking sheet and bake in the preheated oven for 25-30 minutes, or until golden brown and bubbling.
