Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2–3 minutes.
- Beat in the egg until fully incorporated.
- In another bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry mixture into the wet ingredients, mixing on low speed until no flour patches remain.
- Use a cookie scoop or your hands to form the dough into 1-inch balls. Roll each ball in the cinnamon sugar mixture.
Baking
- Place the coated cookie balls on a lined baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes until slightly golden around the edges but still soft in the center.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
