  • 1 cup brown sugar Adds depth of flavor and moisture, resulting in a chewier texture.
  • 1/2 cup granulated sugar Balances sweetness and contributes to a delightful crisp exterior.
  • 2 large eggs Binds the ingredients together and adds richness.
  • 2 teaspoons vanilla extract Enhances the overall flavor profile.
  • 2 cups all-purpose flour Forms the base of the cookie dough.
  • 1/2 teaspoon baking soda Acts as a leavening agent.
  • 1/4 teaspoon salt Enhances flavors and balances sweetness.
For the Cheesecake Filling
  • 8 oz cream cheese, softened Gives the cheesecake filling a rich, creamy texture.
  • 1/4 cup powdered sugar Sweetens the cheesecake filling without adding graininess.
For the Topping
  • 1/4 cup salted caramel sauce Drizzled on top for a sweet-salty flavor.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is smooth and fluffy.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually blend this dry mixture into the creamed butter and sugar mixture until just combined.
  5. In another bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
  6. Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart, and create a small indentation in the center of each.
  7. Fill each indentation with a spoonful of the cream cheese mixture.
  8. Drizzle the salted caramel sauce over each filled cookie.
Baking
  1. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  2. Allow cookies to cool on a wire rack before serving.

Notes

To keep cookies soft and chewy, store them in an airtight container at room temperature. Freeze cookie dough balls before baking for longer storage. For a flavor twist, consider adding chocolate chips or crushed nuts.
