Preparation
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, brown the ground beef or lamb for 5-7 minutes, breaking it up as it cooks.
- Add the diced onions and cook until translucent, about 4-5 minutes. Stir in the mixed vegetables, tomato paste, thyme, salt, and pepper, and cook for another 5 minutes until everything is heated through.
- If making homemade mashed potatoes, boil peeled potatoes until fork-tender, then mash with butter, milk, salt, and pepper to your preference.
- In an oven-safe baking dish, layer the meat and vegetable mixture evenly on the bottom. Spoon the mashed potatoes over the top, smoothing with a spatula.
Baking
- Place the dish in the preheated oven and bake for 20-25 minutes until the top is golden and the filling is bubbling.
- Allow the Shepherd's Pie to rest for 5-10 minutes before serving to let the layers set.
