  • 2 tbsp tomato paste Enhances the savory flavor of the meat.
  • 1 tsp dried thyme Brings earthy notes; fresh herbs can replace if available.
  • 4 cups mashed potatoes The creamy top layer that completes the dish; instant mashed potatoes may be used for a quicker version.
  • Salt and pepper Essential for flavor enhancement.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, brown the ground beef or lamb for 5-7 minutes, breaking it up as it cooks.
  3. Add the diced onions and cook until translucent, about 4-5 minutes. Stir in the mixed vegetables, tomato paste, thyme, salt, and pepper, and cook for another 5 minutes until everything is heated through.
  4. If making homemade mashed potatoes, boil peeled potatoes until fork-tender, then mash with butter, milk, salt, and pepper to your preference.
  5. In an oven-safe baking dish, layer the meat and vegetable mixture evenly on the bottom. Spoon the mashed potatoes over the top, smoothing with a spatula.
Baking
  1. Place the dish in the preheated oven and bake for 20-25 minutes until the top is golden and the filling is bubbling.
  2. Allow the Shepherd's Pie to rest for 5-10 minutes before serving to let the layers set.

Notes
