Ingredients

Main Ingredients
  • 1 lb flank steak Provides tender, flavorful beef; can be substituted with sirloin or ribeye.
  • 1 piece bell pepper (red or green) Adds color and crunch; feel free to use multiple colors for visual appeal.
  • 1 medium onion Adds sweetness and depth; yellow onions work best, but red can be used.
  • 3 tablespoons soy sauce The base of the stir-fry sauce; reduces sodium by using low-sodium soy sauce.
  • 2 tablespoons oyster sauce Enhances the umami flavor; can replace with hoisin sauce for a vegetarian option.
  • 1 tablespoon cornstarch Helps thicken the sauce; gluten-free versions can be used.
  • 1 tablespoon vegetable oil For frying; sesame oil can be used for extra flavor.
  • 1 tablespoon ginger, minced Provides warmth and spice; fresh ginger has the most flavor.
  • 2 cloves garlic, minced Adds aromatic depth; adjust the amount based on your taste preference.

Method

Preparation
  1. Thinly slice the flank steak against the grain into bite-sized pieces.
  2. Slice the bell pepper and onion into strips.
  3. Mince the ginger and garlic.
Marinating
  1. In a medium bowl, combine the sliced steak with 1 tablespoon of soy sauce, cornstarch, and minced ginger. Allow it to marinate for about 10-15 minutes.
Cooking
  1. Heat the vegetable oil in a large skillet or wok over medium-high heat until it shimmers.
  2. Add the marinated beef to the pan in a single layer, allowing it to sear for about 2-3 minutes.
  3. Once the beef is browned, stir in the sliced onions and bell peppers along with the remaining soy sauce and oyster sauce.
  4. Sauté for an additional 4-5 minutes, until the vegetables are slightly tender but still crisp.
  5. Taste and adjust the seasoning if necessary, then let the mixture cook together for another minute.
  6. Serve hot over a bed of steamed rice or noodles.

Notes

Use high heat for a nice sear on the beef and to keep the veggies crisp. Store leftovers in an airtight container in the refrigerator for up to 3 days.
