Preparation
- Thinly slice the flank steak against the grain into bite-sized pieces.
- Slice the bell pepper and onion into strips.
- Mince the ginger and garlic.
Marinating
- In a medium bowl, combine the sliced steak with 1 tablespoon of soy sauce, cornstarch, and minced ginger. Allow it to marinate for about 10-15 minutes.
Cooking
- Heat the vegetable oil in a large skillet or wok over medium-high heat until it shimmers.
- Add the marinated beef to the pan in a single layer, allowing it to sear for about 2-3 minutes.
- Once the beef is browned, stir in the sliced onions and bell peppers along with the remaining soy sauce and oyster sauce.
- Sauté for an additional 4-5 minutes, until the vegetables are slightly tender but still crisp.
- Taste and adjust the seasoning if necessary, then let the mixture cook together for another minute.
- Serve hot over a bed of steamed rice or noodles.

Notes
Use high heat for a nice sear on the beef and to keep the veggies crisp. Store leftovers in an airtight container in the refrigerator for up to 3 days.
