Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).

  4. Add the egg and vanilla extract to the mixture and mix until fully combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing just until combined.
  6. Using a cookie scoop or your hands, form balls of dough about 2 inches in diameter. Roll in extra granulated sugar if desired.
Baking
  1. Place the cookie dough balls on a baking sheet lined with parchment paper, about 2 inches apart.
  2. Bake for 10-12 minutes until the edges are lightly golden.
  3. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
