Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease the mini muffin pan with cooking spray or butter.
  3. In a mixing bowl, combine the flour, melted butter, and granulated sugar. Mix until the dough holds together when pressed.
  4. Using your fingers, press about a tablespoon of the dough into each muffin cup, forming a small shell along the base and sides.
Filling
  1. In another bowl, combine the egg, brown sugar, corn syrup, and vanilla extract. Whisk until well combined and smooth.
  2. Fold the chopped pecans gently into the filling mixture.
  3. Spoon the filling into each prepared crust, filling them about three-quarters full.
Baking
  1. Bake for 15–20 minutes until the filling bubbles and the crust turns lightly golden.
  2. Allow the bites to cool in the pan for about 10 minutes before gently removing them.
