Preparation
- Preheat the oven to 350°F (175°C).
- Lightly grease the mini muffin pan with cooking spray or butter.
- In a mixing bowl, combine the flour, melted butter, and granulated sugar. Mix until the dough holds together when pressed.
- Using your fingers, press about a tablespoon of the dough into each muffin cup, forming a small shell along the base and sides.
Filling
- In another bowl, combine the egg, brown sugar, corn syrup, and vanilla extract. Whisk until well combined and smooth.
- Fold the chopped pecans gently into the filling mixture.
- Spoon the filling into each prepared crust, filling them about three-quarters full.
Baking
- Bake for 15–20 minutes until the filling bubbles and the crust turns lightly golden.
- Allow the bites to cool in the pan for about 10 minutes before gently removing them.
