Dry Ingredients
  • 1 cup all-purpose flour provides the structure for your pancakes
  • 2 tbsp granulated sugar adds sweetness to the pancakes
  • 1 tbsp baking powder gives the pancakes their fluffy texture
  • 1 tsp ground cinnamon brings that classic churro flavor
  • 1/4 tsp salt enhances all the flavors
Wet Ingredients
  • 1 cup milk adds moisture; substitute with almond or oat milk for dairy-free
  • 1 large egg binds ingredients together; can use applesauce for a vegan alternative
  • 2 tbsp melted butter adds richness; can substitute with coconut oil
  • as needed Oil or butter for cooking prevents sticking and provides a crisp edge

Method

Preparation
  1. In a large mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt. Whisk together until well blended.
  2. In a separate bowl, combine the milk, egg, and melted butter. Mix until smooth.
  3. Pour the wet ingredients into the dry ones, stirring gently until just combined. Avoid overmixing.
Cooking
  1. Preheat a non-stick griddle or frying pan over medium heat. Add a splash of oil or a pat of butter.

For the best texture, let the batter rest for 5-10 minutes before cooking. Customize toppings to your taste with berries, syrup, or whipped cream.
