Method
- Preheat oven to 350°F (175°C). Grease a 9×13-inch pan. Mix brownie ingredients until just combined. Stir in chocolate chips if using.
- Bake 23-25 minutes or until a toothpick comes out with moist crumbs. Cool completely, then chill for 30 minutes.
- Whisk pudding mix with milk until thickened. Stir in mint extract and green coloring. Fold in whipped topping and crème de menthe if using.
- Cut brownies into 1-inch squares.
- In a trifle dish, layer half the brownies, mint cream, and crushed cookies. Repeat layers.
- Top with remaining whipped topping, sprinkles, cookie crumbs, chocolate coins, and mint leaves.
- Chill at least 2 hours before serving.
