Ingredients
  

  • 1 box 18.3 oz fudge brownie mix
  • 2 large eggs
  • 1/3 cup vegetable oil or coconut oil
  • 1/4 cup water
  • 1/2 cup mini chocolate chips optional
  • 2 packages 3.4 oz each instant vanilla pudding mix
  • 2 cups cold milk
  • 1 teaspoon mint extract
  • 8-10 drops green food coloring
  • 1 container 8 oz whipped topping, thawed
  • 1/4 cup crème de menthe liqueur optional
  • 1 additional container 8 oz whipped topping
  • 1 cup crushed chocolate sandwich cookies
  • 1/4 cup green sprinkles or sanding sugar
  • Fresh mint leaves
  • Mini chocolate gold coins

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan. Mix brownie ingredients until just combined. Stir in chocolate chips if using.
  2. Bake 23-25 minutes or until a toothpick comes out with moist crumbs. Cool completely, then chill for 30 minutes.
  3. Whisk pudding mix with milk until thickened. Stir in mint extract and green coloring. Fold in whipped topping and crème de menthe if using.
  4. Cut brownies into 1-inch squares.
  5. In a trifle dish, layer half the brownies, mint cream, and crushed cookies. Repeat layers.
  6. Top with remaining whipped topping, sprinkles, cookie crumbs, chocolate coins, and mint leaves.
  7. Chill at least 2 hours before serving.
