Sweeten the Cream Cheese
- Gradually add the powdered sugar and vanilla extract into the cream cheese, continuing to beat until well combined and fluffy, about 2 more minutes.
Assemble the Tacos
- Gently fold in half of the sliced strawberries into the cheesecake mixture.
- Spoon the cheesecake filling into each taco shell, taking care not to overfill.
- Generously sprinkle the crushed strawberry shortcake cookies over the filled tacos.
- Place the assembled tacos in the refrigerator for about 30 minutes.
- Once chilled, serve with any remaining strawberry slices on top.
