Method
 

Prepare the Filling
  1. In a mixing bowl, use a hand mixer to beat the softened cream cheese until smooth, about 2-3 minutes.
Sweeten the Cream Cheese
  1. Gradually add the powdered sugar and vanilla extract into the cream cheese, continuing to beat until well combined and fluffy, about 2 more minutes.
Assemble the Tacos
  1. Gently fold in half of the sliced strawberries into the cheesecake mixture.
  2. Spoon the cheesecake filling into each taco shell, taking care not to overfill.
