Ingredients
  

For the Taquitos
  • 8 small small corn tortillas Corn tortillas work best for rolling.
  • 1 cup cooked chicken or ground beef Shredded or finely chopped; you can use leftover meat too!
  • ½ cup shredded cheese Cheddar or Mexican blend for cheesy goodness.
  • ½ cup salsa Choose your favorite kind for moisture and flavor.
  • 1 tsp cumin Adds a touch of warmth.
  • 1 tsp chili powder Optional, for a bit of heat.
  • as needed cooking spray To achieve that crispy finish.

Method
 

Preparation and Filling
  1. In a bowl, mix together cooked chicken, cheese, salsa, cumin, and chili powder until well combined.
  2. Warm the corn tortillas in the microwave for about 20 seconds to make them pliable.
Assembly and Cooking
  1. Spoon 2 tablespoons of the filling onto each tortilla, roll them tightly, and place seam-side down.
  2. Lightly spray the outside of the rolled taquitos with cooking spray to ensure they crisp up beautifully.
  3. Set your air fryer to 400°F (200°C) and preheat for about 5 minutes.
  4. Arrange the taquitos in a single layer in the air fryer basket. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  5. Enjoy warm with your favorite dipping sauces!

Notes
