Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, salt, and ground cinnamon. Set aside.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Baking
- Scoop tablespoon-sized balls of dough onto ungreased baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, until the edges are golden.
- Let them cool on the pan for a few minutes before transferring to wire racks.
